Publications date from the 1850s-2000, with most materials from the 1910s-1990s. In addition to aspics, translucent desserts, and puddings, this collection also includes a number of items promoting gelatin-based ice cream recipes, particularly from Royal Baking Powder Company and General Foods Corporation (producer of Jell-O).

Has list of teachers of cookery that use and approve it. Describes new product with both Rose and White gelatine for adding color to the "jelly." Has calf's head trademark. Introduction by Charles B. Knox. Some dated testimonials. Some recipes include wine or liquor as an ingredient.
